Recipe for: Plantation Cake

1 cup butter
2 cups sugar
1/2 tsp salt
3 eggs
2 tsp vanilla
5 cups vanilla wafers (crushed coarsly)
1 cup sifted flour
5 tsp baking powder
2 cups milk
1 cup chopped pecans


In large bowl cream butter, sugar, and salt. Beat in eggs and vanilla.
Combine crushed vanilla wafers, flour, and baking powder. Add 1/2
of crumb mixture to to butter mixture with 2 cups of milk. Fold in
remaining crumb mixture and pecans. bake in greased and floured
10 or 12 cup Bundt pan at 350 degrees for 55-60 minutes or until
cake tests done. let cool in pan 10-15 minutes, then turn over on cooling rack
or serving plate to complete cooling. Serve warm with simple lemon sauce.

Lemon sauce:

1 (3 1/4) lemon pudding mix
Make pudding as directed on box and use an additional 1/2 cup of water
